Description or explanation
Fat distribution refers to the coverage and distribution of subcutaneous fat on a carcase. An even coverage of subcutaneous fat enables uniform chilling rates throughout the carcase. An MSA grader ensures coverage is sufficiently adequate over the loin, fore ad hindquarter.
